Analytical Program Description

Number of participants for this project: Min. 18 / Max. 20
1 Week – 44 hours
Arrival and Departure: Saturday afternoon

In order to obtain the knowledge of a productive area, a direct relationship with the territory is needed. The residences that have been chosen are all surrounded by greenery, for the most part situated in the hills. The residences are 19th century Villas and restructured Farmhouses that are characterized by “Architettura Rurale Toscana" (Rural Tuscan Architecture) today known all over the world.

SATURDAY AFTERNOON: Upon arrival at the residence, the guests will have a pleasant welcoming with Arezzo's food products in a dinner with the theme of “buoni sapori toscani" (good Tuscan flavors).

SUNDAY: Relax and familiarize with the surroundings.
In the afternoon, the Director of the Scuola di Cucina (cooking school), will introduce the program by illustrating the didactic method and content of the Seminar. A wine tasting accompanied by cheese, salumi (Italian cold cuts) and bread will conclude this first day of "lessons".

MONDAY: After breakfast, the program begins with the first Gastronomy lesson followed by lunch. This will prepare guests in understanding the products of Companies in the food industry, which will be part of the guided visit in the VALLE DEL CASENTINO
Having a direct contact with the Companies themselves that produce these products allow the guests to immediately understand the methods of workmanship and typicality.
Guests will return to the residence for dinner.

TUESDAY: Gastronomy lessons on the VALTIBERINA or " Valle di Piero" products will be followed by lunch as usual.
After lunch they will be setting out for this valley and therefore visiting some new artisan Companies.
Among the Companies visited, will be a Textile Company where table linens, with antique motifs that are typical of the Tuscan tradition, are made. These table linens personalize, in a very elegant and sober way, table settings.
In the evening guests will return to the residence for dinner.

WEDNESDAY: The sunny and picturesque VALDICHIANA..
The day will begin with lessons followed by lunch after which there will be a visit to the artisan Companies in this area.
During the afternoon guests will have a brief relaxing visit to an artisan Company that makes ceramic crockery used to cook Tuscan specialties and also used in decorating table settings.
In the evening guests will return to the residence for dinner.

THURSDAY: At this point the "students" will have familiarized both with our territory and our traditions in cooking and table settings. The lessons that they will have had together with guided visits to artisan Companies will have given them a background that will help them in choosing products, in distinguishing products and in understanding the different uses of products.
Thursday will be the last valley that is visited, the VALDARNO and therefore the last products of Arezzo that they will learn about. After having had lessons in the morning followed by lunch, they will be visiting the artisan Companies in this valley, which links Arezzo to Florence. The last stop will be a guided visit to an artisan glass Company whose products can be used in the art of table settings.
In the evening guests will return to the residence for dinner.

FRIDAY: This is a very special day at the Scuola di Cucina. All guests are invited for the preparation of a menu made up of old traditional dishes unique to Tuscan gastronomy and table setting.
After lunch they will be returning to the residence and in the afternoon guests and artisans will have a chance to meet. The artisans will be available to answer any questions the guests may have. During this meeting guests can enjoy a tasting of the various products of Arezzo that they have learned about and come to love.

SATURDAY: Unfortunately we will have to say our good byes but the personalized encounters that have developed with the artisans will be solidified when guests and artisans meet again during the morning, by dividing into small intimate groups in the Companies themselves.
After lunch at the Residence, guests will be leaving this enchanting area with wonderful memories and along with their luggage; they will be taking back a baggage of knowledge, which will stay with them forever.
